Ok, to break down the clues:

This and that = two elements in the gem
This will gel = water or perhaps silicone
That won't gem = could be anything but carbon
Wine to what = water (see clue two)

Know you what? this OR that?
If this you know, you know that! = One of the two elements only occurs in one type of gem.

This i have in vane tried = is found in veins (and Ux4 makes spelling mistakes)
This to that I have lead = may contain lead (may not mean anything)
-such an effort, my face red. = is red or has a red streak

Even though it doesn't fit clue number two which should be water, I'm going to say Hematite.

and hemetite it IS
said you "bloodstone", your're a whiz!
For blood DOES course a vein,
spelling hints, ain't your thing.
at Communion time wine does turn
not to water in my urn!
How you got there is a mess!
But congrats, you passed the test!
