Ok, to break down the clues:
This and that = two elements in the gem
This will gel = water or perhaps silicone
That won't gem = could be anything but carbon
Wine to what = water (see clue two)
Know you what? this OR that?
If this you know, you know that! = One of the two elements only occurs in one type of gem.
