Apparently it can be a bit of an issue when you find a ring you like but it is not your size. Likely it could be re sized, but there is time, effort, and can't be done right away. Could I get some info on flexible shanks? I looked but I don't even know what to call them. I'd like to find something that could be used with a narrow shank, and could be added on while the ring is being made. Or maybe just the official name and then I can google prices and whatnot. Thanks

There are a lot of designs...some can be costly
Here's a good start:
"the fingermate"
"Superfit"

http://www.ganoksin.com/borisat/nenam/adjustable-shank.htm
Search under adjustable shank or arthritic shank.

Ah, thanks, but how about something along the lines of a one-size-fits-all, so that someone with a six and someone a size 7 can both wear it?

Nothing will beat a proper sizing, shanks take a lot of abuse and even the best mechanical ones wear out and break.

To my knowledge a "horseshoe" or ring guard would be the only solution here to adjust between sizes. They make a ring guard that spring up and down and are the simplest, temp solution (yes they look terrible if you ask me).

If you come up with a good solution you should patent and market it.

Here are the springy types of ring guards. They are very inexpensive (this person put a generous mark on theirs), easy to install, and come in different mm widths.
